Sultana and Oat Cookies

125g softened butter

½ cup of caster sugar

½ teaspoon vanilla extract

1 egg

2 cups of plain flour

1 tsp baking powder

¾ cups rolled oats

½ cup sultanas

Method:

  1. Preheat oven to 180 degrees
  2. Beat butter, sugar and vanilla in mix master
  3. Add egg, flour, milk and baking powder to mix
  4. Add sultanas, rolled oats and mix through gently
  5. Roll into balls and bake on baking tray
  6. Bake for 15-18 mins until golden.
 
 

Blueberry Muffins

1 ½ cups milk

1 egg

2 teaspoons vanilla extract

2 cups self-rising flour

2 cups of plain flour

¼ teaspoon bicarbonate of soda

1/3 cup caster sugar

25 grams melted butter

½ to 1 cup fresh blueberries

Method:

  1. Mix dry ingredients in a bowl
  2. In a separate bowl lightly whisk egg and milk, vanilla and melted butter, stir
  3. Pour over dry ingredients and mix. Avoid over mixing as pancakes will be tough
  4. Gently stir through blueberries
  5. Allow to sit in fridge for at least half n hour if possible
  6. Heat pan or skillet with canola spray or butter on medium heat
  7. Add a tablespoon of mixture to the pan (for large pancakes use a quarter or third measuring cup)
  8. Turn when bubbles around the edges form
  9. Allow to cool on the other side
  10. Serve with maple syrup, butter or ham and cream
